In November of 2023, I took a Shinkansen trip from Tokyo to Nagoya and on my way, I had the chance to spend a 3-night stay at the beautiful Hyatt Regency Hakone where I could see the top of Mt. Fuji from my room. It was a nice resort surrounded by red-colored maple leaves, with natural hot springs and a Zen-inspired spa. It was my second visit to the Hakone and Shizuoka area.

The chef-owner, with a rich background as a former sous chef at a renowned hotel, brings forth dishes that showcase both expertise and creativity. Each dish is crafted with meticulous techniques, resulting in flavors that are both invigorating and subtle. A standout dish is the Sweet and Sour Fish, featuring crispy seasonal fish accompanied by an array of fresh vegetables and a tantalizing drizzle of vinegar. Equally delightful is their Sweet and Sour Avocado and Eggs, where a zesty sweet and sour sauce complements creamy avocado and fluffy eggs, earning rave reviews from patrons. I highly recommend the Hakone and Shizuoka areas for a romantic and rejuvenating getaway in autumn — simply a trip not to be missed!. It was an easy stop on your way from Tokyo to Nagoya by land.
