Adare Manor has rightfully earned its prestigious title as the #1 resort in the world, according to Condé Nast Traveler, and my recent visit unveiled the reasons behind this well-deserved recognition for this Irish castle hotel. This architectural masterpiece, crafted from the elegant gray Limerick limestone in the 1830s, was initially the family home of the 2nd Earl of Dunraven. It stands as a rare gem, exemplifying a calendar house with 365 windows, representing each day of the year, 52 chimneys denoting the weeks, seven stately stone pillars signifying the days of the week and four majestic towers symbolizing the four seasons.

Upon entering, the grandeur of Adare Manor immediately captivates you, with an expansive entrance hall featuring a meticulously detailed black marble fireplace adorned with a harp, the quintessential symbol of Ireland. The rooms are sumptuous, featuring luxurious bedding, expansive seating areas, a well-stocked drink station and tasteful decor adorned with floral and wildlife artwork. The staff pleasantly surprised us with a delightful anniversary cake and a thoughtful card.

Our culinary journey started in the Oak Room, a Michelin-starred gem that masterfully showcases local ingredients in exquisitely refined Irish dishes. Among the many highlights of our multi-course feast was the Turbot cooked on the bone, complemented by zesty lime, seaweed, a tantalizing Thai sauce and crowned with succulent lobster. After this indulgent meal, we snuck downstairs to explore the Tack Room, a speakeasy that concocts inventive cocktails amid a backdrop of captivating artwork. Another dining option we enjoyed for lunch was the Drawing Room, which offers panoramic views of the enchanting gardens and golf course. And one experience you absolutely cannot miss is indulging in the proper afternoon tea at the historic Gallery, a 132-foot-long space inspired by the Hall of Mirrors at Versailles. Their menu offers an array of both savory and sweet options, accompanied by a selection of perfectly paired teas, including our personal favorite: their signature blend 1832, a fragrant black tea.

The spa at Adare Manor is a sanctuary for serenity. Its inviting pool features a captivating glass ceiling that provides a view of the castle above, as you listen to the soothing sound of rushing water from the river outside. My husband and I thoroughly enjoyed our Aromatherapy Massages and I would love to return to experience the Coladh sleep-sound experience with Irish Ogham stones.

Situated on an expansive 840-acre estate, Adare Manor boasts breathtaking gardens and is home to the magnificent Cedar of Lebanon tree, Ireland's largest, soaring to an impressive height of over 16 meters and believed to have been planted in 1645 AD. Set aside time for a leisurely bike ride across the property, where you'll discover hidden treasures like the historic Ice House dating to 1828, an enchanting woodland walk and the quaint old rental house.

Activities abound at Adare Manor, catering to every interest, from a championship golf course to the age-old art of falconry, archery and fishing. There are even kid-friendly options if you make this a family trip, including a charming bowling alley and cinema. The state-of-the-art workout facilities, adorned with floor-to-ceiling glass windows, allow you to immerse yourself in the lush landscape while maintaining your fitness routine.

Our weekend stay at Adare Manor exceeded all expectations and was truly a dream come true. I have no doubt that your experience here will be equally enchanting and unforgettable! It is the perfect place to celebrate any special occasion, from anniversaries to birthdays or to just top off the ultimate trip to Ireland with a castle stay.
