Red Carnation’s first Edinburgh property, which opened in April, exudes classic Scottish charm with a chic, contemporary flair. Local artisans supplied much of the 30-room gem’s furnishings and artwork. Antique selections further contribute to the handsomely homey aesthetic. The boutique retreat faces the famed Edinburgh Castle, and South African chef Willhelm Maree helms its clublike gourmet restaurant, The Wallace, which serves hearty cuisine featuring local produce.

New opening: Gundari

This 27-key stunner on the rugged Greek island of Folegandros opened on May 23. The decor is stylishly pared back: natural materials and a pervasive, serene vibe reign. Sustainability and holistic wellness are top of mind. Spa treatments incorporate ancient Greek traditions and wild-harvested herbs. Such respect for one’s natural surroundings extends to the farm-to-table Michelin-Starred restaurant, which champions traditional cooking techniques and locally sourced ingredients, much of which comes from the onsite organic garden.

I'm swooning over this gorgeously restored 12th-century castle, in Tuscany’s Chianti region. Original 18th-century frescoes are found in several of the estate’s 50 beautifully understated, artfully restrained rooms.
