DOP Certification: True traditional balsamic vinegar must be produced in Modena or Reggio Emilia and certified with the DOP (Denominazione di Origine Protetta) mark. This designation ensures that the vinegar is made following traditional methods and specific regional guidelines.
Aging Requirements The aging process must take place in wooden barrels, with the duration impacting flavor and price. Traditional balsamic vinegar takes a minimum of 12 years to be considered DOP, while commercial varieties may only ferment for a year.
