Raised on the neighboring island of St. Thomas, I've often turned to Puerto Rico, a mere 20-minute flight away, for a quick escape. In the wake of hurricanes that left a trail of destruction, the Puerto Rico I know today has emerged resilient. This is an island reborn, pulsating with the energy of ambitious young chefs who reimagine mofongo with a gourmet twist; artists who turn dilapidated facades into bold murals, and reggaeton beats that score the backdrop of bustling beachfront bars.
