Visit Valley of Fire outside of Vegas. Easy drive and amazing sites.
Zion National Park. Hike the Narrows and Angels Landing. Not for the faint of heart! Pro tip: Angels Landing now requires a permit ahead of time.
Visit Kanab, Utah and take an ATV sand buggy tour with Kanab Tour Company. Visit a slot canyon and try sand boarding!
Painted Desert and the Petrified Forest. Spend the day cruising through the park, some light hiking trails and plenty of pull overs for great photo ops

Sunset 89 — there are very few restaurants options in this area, but this place had the most amazing cocktails, clever appetizers and an amazing view!
